Ingredients
Burgers
300g Vital Wheat Gluten
1x Tablespoon Nutritional Yeast
400g can of Red Kidney Beans or Black beans
1x Tablespoon Onion Powder
1x Tablespoon Smoked Paprika
1x Tablespoon Dried Sage
1x Tablespoon Dried Thyme
1x Tablespoon Dried Rosemary
1x Tablespoon Dried Oregano
1x Teaspoon Garlic Granules
1x Tablespoon English Mustard
3x Tablespoons Light Soy Sauce
200ml Veg Stock
1x Tablespoon Marmite
Black Pepper
BBQ sauce
Stock
2L Vegetable Stock
1x Tablespoon English Mustard
1x Tablespoon Marmite
1 Onion (quartered)
2 Cloves of Garlic
Sprig Fresh Rosemary
Sprig Fresh Thyme
Black pepper
Tofu Bacon
Block extra firm tofu
1x Tablespoon Smoked Paprika
2x Tablespoons Light Soy Sauce
1x Tablespoon Maple Syrup
1x Tablespoon Liquid Smoke (optional)
Method
Start by making the stock that the burgers will be cooked in. Heat the vegetable stock in a large stock pot, and add all the other stock ingredients. Don't allow this to boil, it just needs to come to simmer.
To make the burgers, add the vital wheat gluten and nutritional yeast to mixing bowl and combine together. Add the remainder of the burger ingredients to a blender and blend until smooth (drain and rinse the beans first).
Pour the blended mixture into the mixing bowl with the vital wheat gluten and stir to combine into a dough. Firmly knead the dough for 10 -12 minutes. Every couple of minutes or so flatten the dough by bashing with a rolling pin or punching it. The dough is ready when it is very elastic, with visible gluten strands. Allow the dough to rest for 5 minutes and then weigh out 1/4lb of seitan and form this into a burger. Repeat until all of the seitan has been used. You should get 7 1/4 pounders. Try to press these quite flat as they will expand when in the stock.
Add the burgers to the stock and leave them to simmer for 45 minutes. Once cooked they can either be allowed to cool and refrigerated until you want to use them or they can be used immediately.
Heat a frying pan over a medium to high heat. Once hot add some oil and a burger and cook for 2 minutes before flipping over. Glaze the burger with some BBQ sauce and allow to cook for another couple minutes, before flipping over again and glazing the other side with more BBQ sauce. Cook for another couple minutes before flipping for a third time and cooking for a minute.
Serve in a toasted bun with salad of choice, BBQ sauce, vegan cheese and optional Tofu Bacon!
Tofu Bacon
To make the tofu bacon boil a block of extra firm tofu completely submerged in salted water for 20 minutes. Remove from the water allow to cool and pat dry. Slice into thin slices. Make a marinade by mixing the rest of the ingredients in a bowl. Lay the Tofu strips on a lined baking tray and pour the marinade over the top. Bake in the oven for 20-25 minutes.
