Ingredients

1x Medium Onion - finely chopped

Thumb-size piece of ginger (minced)

4 Cloves of garlic (minced)

1-3 red chillies (depending how hot you like) - finely chopped

1 tsp coriander seeds

4 Cardamom pods

4 Curry leaves

1 tbsp tamarind paste

1 tsp turmeric

1 tsp Ground coriander

1 tsp Chilli Powder

1 tbsp garam masala

Sea salt and black pepper

1 tbsp brown sugar

Juice from 1 lime

1 400g can chopped tomatoes

Vegetables of choice - I've used 1 medium sized potato, 1 green pepper and a couple handfuls of spinach

Handful of fresh coriander
